Prawns thermidor is a french dish consisting of a creamy mixture. this recipe is so easy to make and I make this dish every once in a while. there’s so many ways to cook prawns and I must say this one is the best.

Ingredients:

  • Prawns
  • Red and Green bell pepper
  • Flour
  • Butter
  • Nutmeg
  • Cheddar Cheese, Gruyere Cheese or Parmesan Cheese
  • Salt and Pepper

Procedure:

  • Chopped the Red and Green Bell pepper finely.

  • In another saucepan, cook the prawns until it turns red-orange it will onky take 2 minutes for the prawns to cook.

  • Cut the Legs and Peel the Prawn leaving the head, shells and tail intact to each other and taking out the meat. set aside the shells. Chop the prawn meat roughly.

  • In a medium saucepan, heat the butter over medium-low heat until melted. Add the flour and stir until smooth. Over medium heat, cook until the mixture turns a light, golden sandy color.
  • Meanwhile, heat the milk in a separate pan until just about to boil. Add the hot milk to the butter mixture little by little, whisking continuously until very smooth. Bring to a boil. stirring constantly, then remove from heat. Season with salt and nutmeg, and set aside until ready to use.

  • In another saucepan saute red and green bell pepper then add the prawns meat. add the Bechamel Sauce and season with pepper.

When the stuffing is cook you can plate it on the prawns shell. adding cheese on top and baking it for 3 minutes or until the cheese is melted.

VOILA!!!

by far I think the best I ever owned is Wusthof’s Knives! :) but Henckels was the knife I was using while I was at Culinary School. either way both are good! Goodluck on your new work! :)

There has been much debate among experts as to whether “doughnut” or “donut” is the proper spelling. “Doughnut” is actually proper, but “donut” is acceptable. If you look in older dictionaries, you’ll only find “doughnut.” However, the Merriam-Webster dictionary now lists “donut” as a variant of “doughnut.” Either way you spell it, it’s still delicious!!

INGREDIENTS:

1 Cup heated milk

2 Eggs beaten

1/4 Cup Butter

1/4 Cup Sugar

1 Tbsp Yeast

1/8 tsp Nutmeg

1/2 tsp Salt

3 Cups All Purpose Flour

PROCEDURE:

  • Melt Butter in hot milk, add 1tsp Sugar and the Salt. Allow to cool.
  • Beat in Yeast, Nutmeg, Eggs and remaining Sugar.
  • Add Flour ( The dough will be sticky)

  • Knead for 5 to 10 minutes then allow to rise for 1 hour.

  • Roll out dough and cut into shapes
  • Do not re-roll dough then allow to rise for 45 minutes

FOR THE GLAZE:

  • Mix 1 1/2 Cup of Powdered Sugar, 1/8 tsp Salt, 1/2 Tsp Vanilla and 1/4 Cup Cold Water.

  • Heat Oil and fry until golden brown.
  • Let them cool on a paper towel- helps the glaze stick
  • Dip in warm Glaze.

 For Valentines Day, I decided to cook these dish to make it extra special and because I spent the day alone in the house. I’m really not a fan of V-day but since Im really inspired because I spent my week watching Hell’s Kitchen and Top Chef I went from going out to cooking. here’s my dish, it’s not really extraordinary but for me the spices complement the chicken so well.

Chicken Cordon Bleu with Cabbage Mashed Potato and Bacon Deviled Eggs and for the Dessert I Made Apple-Struedel Choco Ice cream with Strawberry dipped in Nutella

Chicken Cordon Bleu:

  • First I made a pocket on the chicken breast so Ill be able to stuff the Cheddar cheese inside, use a toothpick to secure.
  • Then I marinated the chicken with a lot of sage and a little bit of basil. I seasoned it with salt and pepper.
  • Lastly, I drizzle a little bit of olive oil in the chicken before covering and leaving it for about 20minutes.
  • Fry the chicken until golden brown, both sides. after that wait for 2minutes before slicing it.

 

For the Sauce:

  • In a pan melt butter, fry the sliced button mushroom until golden brown then add the white onion. put a little bit of white wine.
  • After that add the water and the chicken broth, season with salt and pepper.

For the Bacon Deviled Eggs:

  • boil the egg for 7minutes, take out the skins and slice the egg in half. scoop the yolk and put in in another bowl.
  • in another pan fry the bacon until crisp.
  • mix the bacon into the yolk, add mayonnaise, paprika, salt and pepper.
  • pipe it in the white egg.

For the Cabbage Mashed Potato

  • Boil the potato into a pot and put some salt. cook until fork tender - about 30-35 minutes - drain. Mash with a potato masher then add cut up butter, finely chopped cabbage, milk, salt and pepper to taste.
  • top with some almonds nuts.

VOILA!

For the dessert.

the Apple Struedel:

  • Apple sliced into rings. In a bowl I mixed Cinnamon, Sugar and butter. before putting it to oven I decided to add Salt on top so the apple would be a contrast in the chocolate ice cream.
  • For the Strawberry I melted the sugar in a pan until its thick enough then i tossed in the stawberry. after that I let it cool then I just dipped it in the nutella.
  • I plated it ahead of time and stuff it in the freezer.

It’s been a long time since my last post. Just to keep me motivated and inspired my mom brought me a 2 set of knives. I don’t understand though why she have to buy 2 sets but then again this is the best christmas gift ever. These aren’t expensive like wusthof or henckels or whatever but it’s from my mom and she worked hard for me to have a new knives.

So, I must say you have to prepare your stomach for my coming recipes cause it will make your world upside down. Hope so! Ha!

FOR THE SAUCE:

1 tsp Ginger

1 Clove Garlic

4 Tbsp Soy Sauce

2 Tbsp Brown Sugar

1 tsp Vinegar

  • Simmer for 2 minutes.

FOR THE BABY POTATO CHIPS:

  • Wash the potatoes, Thinly Slice it. Deep Fry until crisp. Drain.

FOR THE CRISPY FISH:

  • Marinade the fish with 2 Tbsp Lemon Juice and 1 tsp Curry Powder and add Salt and Pepper.
  • Coat with cornstarch then deep fry.

VOILA!!!
